Grandma’s Buttermilk Cookies

Fair warning – no, these are not healthy. But sometimes we deserve a treat, and these will provide just that. Don’t be too hard on yourself and indulge with my Grandma’s buttermilk cookies! They are my go-to cookies, not super sweet (which I prefer) and taste like mini chocolate chip pancakes. Light, airy, and super chocolatey.

Prep Time: 90 min (dough needs to chill) / Cook Time: 10 min / Servings: 24 cookies

Ingredients

  • 1/4 cup shortening
  • 1/4 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup buttermilk
  • 1 bag (4 cups) semisweet chocolate chips
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 salt

Directions

  • Preheat oven to 400
  • Mix shortening, butter and sugar until light and fluffy
  • Mix in egg, vanilla and buttermilk
  • Mix in chocolate chips
  • Sift flour, baking soda and salt in a separate bowl
  • Add dry ingredients to wet ingredients (dough will be stiff)
  • Chill dough at least an hour or overnight
  • Bake 8-10 min
*Serving size is one cookie.
