Fair warning – no, these are not healthy. But sometimes we deserve a treat, and these will provide just that. Don’t be too hard on yourself and indulge with my Grandma’s buttermilk cookies! They are my go-to cookies, not super sweet (which I prefer) and taste like mini chocolate chip pancakes. Light, airy, and super chocolatey.
Prep Time: 90 min (dough needs to chill) / Cook Time: 10 min / Servings: 24 cookies
Ingredients
- 1/4 cup shortening
- 1/4 cup butter
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 3/4 cup buttermilk
- 1 bag (4 cups) semisweet chocolate chips
- 2 cups flour
- 1/2 tsp baking soda
- 1/2 salt
Directions
- Preheat oven to 400
- Mix shortening, butter and sugar until light and fluffy
- Mix in egg, vanilla and buttermilk
- Mix in chocolate chips
- Sift flour, baking soda and salt in a separate bowl
- Add dry ingredients to wet ingredients (dough will be stiff)
- Chill dough at least an hour or overnight
- Bake 8-10 min
